Pastry ChefI’m a vegan pastry chef with over a decade of experience, and baking has always been about people, connection, and that little moment of joy when something truly good is shared. I love working with local, seasonal ingredients and care deeply about quality, simplicity, and honest flavors. My style is minimal but expressive, with a quiet twist in each creation that makes you forget the labels and simply enjoy the moment. Whether it’s plant-based pastries, vegan desserts, or modern takes on traditional classics, my focus is always on creating food that feels thoughtful and genuine.
I’m excited to take on a leadership role at Twist Artisan Bakery Dublin and work alongside the incredibly talented Laura and a passionate team who bring warmth to every pastry, every cup of coffee, and every interaction. Together, we’re helping shape not just the recipes, but the atmosphere — a bakery that feels welcoming, intentional, and full of care.
I grew up in a big family where any excuse was a good excuse to bake, and that love still lives in my kitchen today. I believe food should be simple, kind, and shared. When I’m not in the bakery, you’ll likely find me testing new vegan dessert ideas, swapping recipes with friends, or planning the next family dinner — always followed by a long walk to reset and find new inspiration.

BakerA passionate baker with a strong background spanning traditional bakeries and high-end hotel kitchens, I’ve spent years mastering the craft of artisan baking. I began by working night shifts perfecting sourdough breads, developing a deep understanding of natural fermentation and traditional techniques before moving into leadership roles. This experience led me to become Production Manager at a large-scale artisan croissanterie, where I oversaw high-volume production of laminated pastries and breads while maintaining the highest standards of quality and consistency.
I am excited to join Twist and help build a truly special artisan bakery in the heart of Dublin. Combining my knowledge of classic baking methods with innovative, modern approaches, I aim to create exceptional products that reflect both tradition and creativity. Having mastered both artisanal craftsmanship and large-scale production, I’m thrilled to embark on this journey alongside Marija. Together, we are shaping a bakery where traditional recipes are respected and reimagined through a contemporary lens, offering customers a high-quality experience with every loaf, pastry, and sourdough we bake.
